The olive oil in cooking
Delicate dishes such as fish, chicken or veal, require a delicate olive oil, extra virgin olive oil or as an alternative you can use scented oils as lemon oil or orange oil. For robust and highly seasoned dishes, like soups or tomatoes sauces, we recommend the use of an oil or a citrus dop olive oil, suitable for steamed vegetables and salads. On the other hand for barbecue and roast, scented oils are indicated, keeping the same extra virgin olive oil characteristics. Frying in olive oil creates a crispy crust that allows only a small oil amount to impregnate the food, even in this case you can use the extra virgin olive oil. |
